"Shamrock" Biscuits



These are too cute, I love how the parsley look like shamrocks! I thought they were tasty and even had one as "dessert" but the Mr. said they were too fancy for him. WHAT?!? Too fancy? Apparently the herb taste threw him off and he was expecting a bland biscuit. He said it was something you would get in a fancy restaurant and that he is too blue collar for it. So, what my darling husband was trying to tell me was "Kristin, your biscuits are so amazing you should charge people top dollar for them."


You can use whatever herbs you would like, I personally used Rosemary and Tarragon. When I made the recipe I needed to add a splash bit more milk to the dough other than that the recipe was pretty simple. These will be on our table every year for St. Patrick's Day, they are just so festive looking and did I mention that it is a one bowl deal?


  • 1 1/4 c. all purpose flour
  • 1 c. wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbsp. sugar
  • 1/3 c. milk
  • 3 Tbsp oil
  • 1/2 c. cheddar cheese
  • 2 Tbsp. herbs, finely chopped
  • 1/4 c. lite sour cream
  • 1 egg, lightly beaten
  • parsley leaves (for garnish)

  1. Preheat over to 450F degrees.
  2. In a large bowl mix flour, baking soda, baking powder, salt and sugar.
  3. Make a well in the center of the dry mix and add milk, oil, sour cream, herbs and cheese into the well. Mix until moistened.
  4. On a lightly floured surface kneed dough for 10 folds. Roll dough to 3/4 inch thick and cut out 2 inch circle cookie cutter.
  5. Place biscuits an inch apart on parchment paper lined baking sheet. Brush the top of biscuits with egg, place parsley leaf on top and brush biscuit again with egg wash.
  6. Bake for 12 - 15 minutes.
