Peanut Butter Swirl Brownie Waffles

Okay, I know that this isn't the healthiest thing in the world but we all need to let loose every once in a while. My soft spot is for brownies and well when I heard of brownie waffles I knew it was love. When I was up in NY visiting family my husband and I went out with some friends to eat dinner. Right next door to the restaurant was another place that served waffle brownies. I was super excited to sink my teeth into one of these babies, I thought about it throughout dinner. We finish dinner, go next door for dessert and the door is locked. I was heart broken for about a few minutes and then decided, who needs them we will make our own! So off to the grocery store we went to pick up brownie mix, caramel sauce and ice cream. Let me tell you, those babies did not disappoint.

Now speed ahead a couple of weeks and you have me sitting on the couch watching tv and out of no where I get the urge for brownie waffles! So hubby and I go into the kitchen whip up a batch of homemade brownie mix, stir in peanut butter and go to town devouring a whole batch of brownie mix. Yes I know, I am shameless but they were just that good.

These are simple to make but extremely fun to eat. I topped my brownie with mud pie ice cream, peanut butter and caramel butterscotch sauce. The brownies were a little tough to get out because they are not as sturdy as a normal waffle but all I did was flip my waffle iron upside down to get the waffle to fall out.


  • 1/2 c. margarine, melted
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/3 c. unsweetened cocoa powder
  • 1/2 c. all-purpose flour
  • 1/4 tsp. baking powder
  • 1/4 c. peanut butter, melted
  1. In a large bowl mix together the melted butter, sugar, eggs and vanilla extract. Beat in cocoa powder, flour and baking powder. Drizzle melted peanut butter on top of batter but do not mix, it is okay that it mixes while you scoop out batter but you don't want to fully mix the peanut butter in the batter.


  2. Spray waffle iron with cooking spray. Pour batter in the waffle iron until the batter covers the pan. Close waffle iron and allow to cook 2 minutes. Top with your choice of toppings
