Thanksgiving Leftover Croquettes


This is a great holiday leftover go to recipe. You can use up your vegetables and your meat all in one. If you want to take a short cut on making this just mix all of the ingredients together rather than trying to stuff the potato with the chicken mixture. At the end I had a lot more chicken left than I did potatoes so I just mixed the two and formed the balls and it taste the same. As for a sauce you can make it with a chipotle mayo sauce I suppose. I made a cheese sauce to go over top (recipe at bottom)


  • 6 potatoes, mashed
  • 3 c. turkey, cooked and chopped
  • 2 eggs
  • 1 Tbsp. cornstarch
  • 2 Tbsp. milk
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 bell pepper, diced
  • 1 small onion, diced
  • 2 button mushrooms, diced
  • 1 carrot, diced
  • 1/2 tsp dried oregano
  • 1/4 tsp. red pepper flakes
  • 1 c. bread crumbs
  • 1 Tbsp. oil
  1. Preheat oven to 375 degrees and grease a baking sheet with cooking spray.
  2. In a medium bowl, combine the potatoes, milk, 1 egg, cornstarch, chili powder, garlic powder, salt and pepper to taste and mash until evenly combined; set aside.
  3. In a large sauce pan saute the onion, carrots, mushrooms and bell pepper in 1 Tbsp of oil.
  4. For the filling: In another medium bowl add the peppers, chicken, mushrooms. carrots, oregano, red pepper flakes, salt and pepper, to taste. Stir well to combine.
  5. Whisk the remaining egg in a small bowl. Put the bread crumbs in another small bowl.
  6. Take a handful of potato mix and smash flat onto your hand. Take about 3 Tbsp of the chicken mixture and place in the center of the potato mixture and fold the potato up to cover the chicken. Roll into a ball and roll into egg wash and then roll into the bread crumbs and place on baking sheet.
  7. Bake for 30 minutes or until brown and crunchy on the outside.



Cheese Sauce
  • 1 Tbsp butter
  • 1 Tbsp flour
  • 2 c. milk
  • 1 c. cheddar cheese
  1. In a medium size pot melt butter. Add flour and stir to keep from burning for about a minute. Add milk and continue to stir until there is no more lumps. Once sauce thickens add the cheese.
