These are a really good and hearty cookie. I love peanut butter cookies and can scarf down half a dozen in one sitting. I decided to make my cookies with whole wheat flour and oats to make it a little bit better for you than a normal cookie. Not only do they taste really good but it takes less cookies to satisfy your craving. This recipe made about 2 dozen cookies. They stayed moist and delicious for up to a week. Just store them in an airtight container and they should be fine.
- 3/4 c. margarine
- 1 c. natural peanut butter
- 1 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1/4 c. skim milk
- 1 tsp. vanilla extract
- 2 c. whole wheat flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. oats
- Preheat oven to 350
- Beat the eggs and mix in peanut butter, milk, vanilla and both of the sugars.
- Mix the flour, oats, baking soda and salt.
- Add the dry ingredients to the wet and mix until combined.
- Drop the batter in tablespoons on the baking sheet.
- Bake for 10-15 minutes until light brown.
