Whole Wheat Peanut Butter Oatmeal Cookies

These are a really good and hearty cookie. I love peanut butter cookies and can scarf down half a dozen in one sitting. I decided to make my cookies with whole wheat flour and oats to make it a little bit better for you than a normal cookie. Not only do they taste really good but it takes less cookies to satisfy your craving. This recipe made about 2 dozen cookies. They stayed moist and delicious for up to a week. Just store them in an airtight container and they should be fine.

  • 3/4 c. margarine
  • 1 c. natural peanut butter
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1/4 c. skim milk
  • 1 tsp. vanilla extract
  • 2 c. whole wheat flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. oats

  1. Preheat oven to 350
  2. Beat the eggs and mix in peanut butter, milk, vanilla and both of the sugars.
  3. Mix the flour, oats, baking soda and salt.
  4. Add the dry ingredients to the wet and mix until combined.
  5. Drop the batter in tablespoons on the baking sheet.
  6. Bake for 10-15 minutes until light brown.
