This is always my go to recipe when I have leftover salmon. It is fast to throw together and I usually have all the ingredients on hand. This is a perfect summer dish to make when you are relaxing outside enjoying the beautiful day.
- 1 lb salmon, cooked
- 1 scallion, sliced
- 1/4 c. bell pepper, finely chopped
- 1 Tbsp. sweet chili sauce
- 3 Tbsp. mayonnaise
- 1/4 c. bread crumbs
- In a medium bowl flake the salmon and make sure that there are no bones. Add the scallion, bell pepper, chili sauce, mayo and bread crumbs and mix until well combined. Roll into 1/3 cup balls and shape into patties.
- In a large skillet heat oil over medium heat. Add the salmon cakes once the skillet is hot, cook for 3 minutes, flip and continue to cook another 3 minutes or until brown on the bottom.
