Halloween Onigiri

It is finally October! I cannot tell you how antsy I have been to put up decorations and post my Halloween onigiri I made. I made them a week or two ago because I just could not wait any longer.

I do not have any of those fancy nori cutters or rice molds so I cut the nori with a sharp knife and molded the rice with cookie cutters or by hand. I came across the idea of using carrots in the rice to make it orange from Just Bento. I have yet to make the other colors because I was so excited about orange for Halloween but those are definitely on my to do list.

  • 1 1/2 c. medium grade sushi rice
  • 2 c. water
  • 1 medium-large carrot, finely grated
  • nori (dried seaweed)
  • Halloween cookie cutters
  • salt

  1. Combine rice, carrot and water in a medium pot. Bring to a soft boil, reduce heat to low and simmer covered for 20 minutes or until the moisture is absorbed and the rice is soft. Remove from heat and let stand covered for 10 minutes, fluff with fork and let cool.
  2. When rice is cool enough to handle lay down a piece of plastic wrap with the cookie cutter on top and pack the rice into the cookie cutter. Make sure to dip your hands in water to keep the rice from sticking to you. Carefully push the rice out of the mold, sprinkle with salt and decorate with the nori. Wrap up in plastic wrap and store in refrigerator or freezer.

Fun. I've not had onigiri before, but it looks easy enough to make. I like that it's simple to incorporate new, interesting flavors every time.
